Olivier Certain came to England in 1998 with the intention of staying for two years in order to practice his English. But the Marseille-born Head Chef of the Swan in Bampton never left.
Instead, he continued his culinary journey in the UK after graduating from the Marseille Catering School and having received training from La Bonne Tape Chateau Arnoux and Les Riches in Le Lavandou. He perfected his craft under chef and mentor Andrew Dixon in 2001 (3 AA rosettes) before moving on to become the head chef at Woods in Dulverton in 2006. It was here where he achieved two rosettes and the award of Somerset Dining Pub of the Year 2008, 2010 and 2011. He was also a South West Chef of the Year finalist in 2009.
